The smaller kitchens can produce up to 1,000 meals a day,” David said. There are also support trailers for laundry, dishwashing or power generators if needed. Those who rent the trailers supply their own staff, and buy their own foods, of course. Most are rental trailers, towed to the sites to be hooked up to the power, water and sewer systems,
or a generator. “In our rental fleet, we have 46 trailers that we own ourselves. We also build to sell. Once the rental is completed, we get the trailer back and we take it apart and we clean it, or replace the equipment. It’s like car rental. You’re going to have the up-to-date, the newest, equipment.” David plans to retire next month. “I have had a great career, a great run. It’s been 42 years.” The torch will be passed on to his long-time American
partner Cris Leatherwood, who will own Mobile Kitchens on both sides of the border. David has known Cris for a long time.

So they build these trailer kitchens like… car rentals? Idk that part sounds kinda sketchy but also smart. 2,500 meals a day is wild, I didn’t think you could do that much with a trailer.
Wait is the guy from Kingston like actually retiring and then the American partner takes over, right? I saw “support trailers” and thought it was like medical stuff or whatever lol. Also the whole power/water/sewer hook up… don’t they need permits for that?
Mobile kitchens for events? cool I guess. But why are they mentioning “American partner Cris Leatherwood” like that matters to me… if it’s on both sides of the border then wouldn’t it just be the same company? And 46 trailers they own?? sounds like they’re basically running a whole fleet of food trucks but bigger, like way bigger. Hopefully they actually get the generator part right during outages.
