Bar Bruno Brings Italian Diner Vibes to Sydney’s York Street

The team behind Odd Culture is expanding their hospitality footprint with Bar Bruno, a new all-day Italian osteria opening in Sydney this May.
Fresh from opening its Daiquiri-fuelled discotheque Razz Room, the Odd Culture team’s preparing to welcome diners to Bar Bruno.. The all-day osteria sits next door to Razz’s big red double doors with a more intimate, understated energy – and service from early till late.. Lunch and dinner services are the focus, but on weekdays Bruno will open at 10am for coffee (on Genovese beans) and a spread of pastries.. Biscotti, sfogliatelle, cannoli and a torte
of the day?. A sweet Italian breakfast.. Proof that morning service is the warm-up, each of your coffee stamps take you closer to a Martini on the house.. Just one more thing to lure the morning crowd in later on.. “[Bar Bruno is] small, intimate.. It was really important that we come in as what we are, which is really great neighbourhood venues,” CEO Bec Lines says.. The team focuses on simple plates done well,
leaving the caviar trolleys and tableside tricks to other dining rooms in the CBD.. “What I want to try and create is a really great place that is solid, that feels reliable at any time of the day – it doesn’t close, it just unfolds throughout the day.” Studio Vista led the design, leaving the exposed brick walls and beams crossing overhead.. The facade is glassy, with brown leather booths and framed pieces on the
wall.. There’s a lofted 14-person semi-private dining room that, when not in use, offers diners a view overlooking the warm space.. The osteria’s menu starts with small plates, before running into a cosy selection of larger serves.. “With Italian, it’s all about the produce and not messing about with it too much,” executive chef Tony Gibson says.. “You know, you’re coming in getting a ragu and a beautiful handmade pasta.” There is pasta – long
shapes and filled parcels are made in-house, shorter shapes are supplied by Fabbrica – but it’s not the menu workhorse.. You’ll find a pretty dish of mussels, cooked with fagioli giganti (jumbo butter beans imported from Italy), ’nduja butter and charred lemon vinaigrette, as well as a brothy serve of Murray cod.. In that dish, parmesan rinds are slow-cooked overnight with charred aromats, then reduced into a “rich, velvety” broth and ladled on top of
the fish fillet, finished with butter and chives.. “With all the food, there’s no smoke and mirrors,” says Gibson.. “There’s no hiding anywhere – just nice, tasty and honest.. Nothing’s overworked, nothing’s trying too hard.. Simplicity is what it’s all about.. Familiar.” There’s a classic burger and four salads (including an Italian Caesar) that’ll no doubt have fans in the lunchtime service.. The cheeseburger is way less party than the Razz Royale downstairs: onion rings
on the side, provolone and Red Leicester melting on top of the patty.. “It’s just a really good, classic burger,” Lines says.. Bar Bruno’s aperitivo hour will run from 3pm till 5pm, six days a week – with snacks ideal for the 100-bottle Italian wine list, amaro offering, signature Negroni and cocktail selection..
