Park Hyatt Cabo Del Sol opens; award rates surge May 20

Park Hyatt’s long-awaited debut in Mexico has landed in Cabo del Sol, with the property opening after a soft rollout of key amenities and dining concepts. For points travelers, the timing is especially sharp: award pricing is set to climb as Hyatt moves the ho
Pull up to Park Hyatt Cabo Del Sol and the resort’s vibe arrives fast: a modern. whitewashed exterior in the Cabo del Sol development. followed by an open-air lobby where the Pacific view hits immediately.. Inside. check-in happens with a hibiscus. raspberry and citron welcome drink. and the ocean seems to follow you as the property’s neutral palette turns sunlit walls into a backdrop of cactus-shaped shadows.
The Park Hyatt Cabo Del Sol officially opened in December. joining an upscale Cabo del Sol cluster that already includes resorts such as Four Seasons Resort Cabo Del Sol.. Since opening. the hotel has been finishing construction on a few remaining buildings while soft-launching several of its headline amenities and dining concepts. positioning itself as a new luxury stop for travelers eager to spend points in Cabo.
Design-forward, built around views, and notably different from Hyatt’s earlier, wilder Cabo luxury outpost, The Cape, A Thompson Hotel, Park Hyatt is aiming at a more serene experience—one that feels intentionally tuned for both couples and families.
And for anyone watching award pricing, there’s another urgency layered in: Hyatt’s forthcoming award chart changes are set to raise costs at the property starting May 20.
A resort that’s meant to feel compact and effortless
From the start, the layout is designed to keep you close to the action.. After check-in. the hotel connects guests with a personal concierge—my guide. Tiffany—who leads a quick tour before taking you to your room.. Even though a golf cart is available, the resort feels compact enough to navigate on foot.
The staff’s favorite line—“the ocean finds you”—lands because it’s practically everywhere. Once you’re through the lobby, views stay in frame, and even the sunlight patterns on white walls read like part of the design.
When it comes to accommodations. Park Hyatt plans for a larger. luxury-heavy room mix: once construction is complete. the property will have 163 guest rooms. more than half of them suites.. Base-level rooms start at 649 square feet, and even non-suite options are positioned as spacious rather than tight and boutique.
Rooms are contemporary and understated, aiming to blend into the landscape instead of overpowering it.. An expansive Deluxe Suite Ocean View leaned into that idea, with a setup that felt particularly family-friendly.. The suite’s living area opens to a large space with its own powder room that can be closed off from the bedroom—useful. especially once a child has gone to sleep.
In that same living space, the minibar includes complimentary drinks and snacks.. During the stay. the concierge offered to customize options on request. including items such as artisanal potato chips. energy bars and mini churros.. Premium alcoholic beverages are available for an additional charge, including bottles of wine priced at $122 to $209 and craft beer at $14.
The standout: a huge patio built for lingering
Both the living room and bedroom open to what the stay makes hard to ignore: a large patio overlooking the resort and ocean. complete with loungers. a small dining table and chairs. plus a separate seating area.. A fan above helps keep things comfortable, with control handled via a panel in the bedroom.. Many room types across the property feature terraces or patios, and some come with plunge pools.
Inside, the bedroom stays bright and minimal, connected to a sizable bathroom with a large soaking tub, a glass-enclosed rainfall shower, a separate water closet and a wood-paneled walk-in closet. The bathroom is stocked with everything from bug repellent to bath salts.
Food is already a major draw—even before everything is fully open
Park Hyatt’s strongest early differentiator is dining.. Even after a three-night visit. the experience suggests the on-property food program is built to keep guests entertained without constant off-site plans.. Servers also stand out for how they handle dietary needs—on one occasion. they knew the writer was vegetarian before arriving and brought off-menu desserts designed to avoid eggs.
Mesa Madre, the all-day Mexican restaurant, is presented as a gathering spot with local dishes, many cooked on a comal.. Among the items highlighted were an heirloom tomato aguachile for $33. poblano pepper stuffed with squash blossoms and corn for $36. and the Yaqui cocktail for $22—a negroni-style drink with coffee-infused bacanora. vermouth. strawberry-infused Campari and chocolate bitters.
The property’s signature restaurant. Silán. is scheduled to open later this year. but guests can preview its Levantine menu at Costamar Beach Club in the evenings.. That offering draws on North African and Middle Eastern influences with seasonal Baja ingredients. including homemade hummus ($26) and labneh ($24). grilled rock cornish ($64) and smoked beef kebab ($87).. A vegetarian-focused meal included eggplant and zucchini kebabs tailored to dietary needs.. Baklava is also part of the preview menu. with Silán’s version listed at $21 and described as featuring walnuts. citrus honey and vanilla ice cream.
Costamar also works as a more casual lunch option with ocean views.. The menu mixes Mexican and American staples like guacamole. fajitas. pizzas. burgers and salads. with a seafood-heavy emphasis on items like pokes and ceviches.. The resort is part of a program supporting local fishermen, so freshness is framed as a core promise.
Poolside, the Pool Bar keeps the resort’s service momentum going with pool-adjacent ordering. Items enjoyed include a quinoa salad ($36) and guacamole ($26), with menu options spanning tacos, tostadas and sandwiches.
For coffee lovers. Dátil Coffee Shop is positioned as a must-visit. offering espresso drinks made with beans from Mexico’s top coffee regions. alongside smoothies. parfaits. ice creams and house-made pastries and chocolate truffles.. During the visit. the go-to order centered on Dammann Frères vanilla rooibos tea and an avocado and cacao bowl priced at $22.
In-room dining is available 24/7, and the stay specifically highlights an off-room-service-menu option: the Healthy Bowl ($28), which features yogurt blended with serrano peppers topped with chia seeds, berries, avocado, sliced almonds and chocolate chips.
Amenities built for daily comfort
The resort’s service model revolves around convenience and responsiveness. In one case, multiple staff members teamed up to locate a water bottle left by the pool and bring it to the gym.
Multiple pools—including a family pool—help distribute guests, and music levels are described as present without being intrusive.. The day cabana experience is described as spacious and secluded.. One missing feature that would have been liked is a hot tub. but the heat during the stay made that feel less necessary.
The beach itself isn’t swimmable, but the adults-only beach club offers chair seating on the sand and an infinity pool overlooking the ocean.
Families are accommodated through the complimentary Roadrunners kids club for guests ages 5 to 11, running from 9 a.m. to 5 p.m. Activities listed include maraca making, board games and piñata decoration.
Pets are welcome with a $130 pet fee that includes a plush bed, a water bowl and treats, and staff told guests that several dogs have already visited.
Extra-cost activities include yoga, whale watching and two cooking experiences. One class focused on masa, with chefs guiding guests in making quesadillas, sopes and tetelas, along with salsa and guacamole to be enjoyed for lunch.
A spa sized like a destination
At 59,000 square feet, the Saria Spa is described as a must-see even if only to take in its outdoor design. It’s built around the idea of Baja California—where ocean meets desert—pairing architectural pools with mountain views and local flora.
Treatments include options such as the Inner Calm massage, named for the feeling they’re meant to create. The treatment experience begins with a welcome drink of citrus, tea and caramel, and guests are invited to use hydrotherapy pools, sauna and steam room before and after.
The spa area also includes a yoga studio and a state-of-the-art fitness center with Technogym equipment. The gym is designed so machines look out onto the spa pool.
Getting there: about 45 minutes from SJD
The hotel is roughly 45 minutes by car from Los Cabos International Airport (SJD).. Transfer options include private transportation arranged by the hotel at $190 each way. taxis at similarly priced rates. and Uber service operating in the area.. Guests who rent a car get free parking.. The resort is within luxury Cabo del Sol. including two golf courses and the Anima Village mall. and a complimentary shuttle helps guests explore nearby areas on short notice—rides can be arranged with as little as 10 minutes of notice. including by texting when you’re ready.
What it costs right now—and what changes May 20
For World of Hyatt members, Park Hyatt Cabo Del Sol is part of World of Hyatt, so points can be both earned and redeemed. Right now, award rates are listed as hovering between 35,000 and 45,000 points per night through the end of 2026.
But Hyatt’s upcoming award chart changes are expected to lift the cost. As a Category 8 property, nights at Park Hyatt Cabo are projected to rise to as many as 75,000 World of Hyatt points per night beginning May 20.
Cash rates at the resort are described as pricing out between $800 and $1,200-plus per night during the period referenced.
Access, pets, and service for mobility needs
The resort includes two ADA-accessible accommodations—one standard room and one suite—both designed for guests with limited mobility and featuring roll-in showers.. Across the property. elevators and ramp access support movement between buildings and amenity spaces. and golf cart transportation is available on request.
Service dogs are also welcome.
In the end. Park Hyatt Cabo Del Sol is arriving with the kind of hospitality and dining reputation that suggests it will be easy to fall into a “just stay on property” rhythm.. Full launches of the spa and the signature restaurant are still to come. and a few last buildings are still under construction—but service is already described as being in peak form.
For points travelers, though, the clock is tied to one date: booking before May 20 is framed as especially important, since award rates are expected to balloon once the Category 8 pricing begins.
