Go big with these burgers for Father’s Day

Go big – A messy, double-fisted Father’s Day burger built with 80% lean beef patties, smoky bacon, melted cheese, roasted onions, spicy mayo, and pickles—finished hot on toasted buns and served immediately with napkins ready.
Father’s Day calls for something that doesn’t whisper. It should sizzle, drip, and leave you reaching for napkins before you even sit down.
These burgers are built for that moment: double-fisted patties made from 1 3/4 pounds of 80% lean ground beef. layered under thick-cut bacon. a cheese slice that melts right on the grill. and sweet yellow onions cooked until soft and golden. The heat comes from a smoky. punchy mayo—spiked with smoked sweet paprika and chipotle chile powder (or cayenne). plus grated garlic and lemon juice for brightness. Dill pickle slices and butter lettuce leaves add tang and crunch to hold up the indulgence.
The recipe is straightforward in timing—active time and total time both clock in at 45 minutes—and it’s designed for a quick. big build. It makes 4 burgers. and the instructions are clear: toast the buns. assemble immediately. and don’t pretend you’ll need sides. Plan on a cold beverage and plenty of napkins instead.
To start, combine 1 cup mayonnaise with 1 grated garlic clove, 1 teaspoon fresh lemon juice, 1 teaspoon smoked sweet paprika, 1/4 teaspoon chipotle chile powder or cayenne, and 1/2 teaspoon kosher salt. Stir to blend, then refrigerate until use.
For the meat, finely chop 2 slices of the 8 slices of thick-cut bacon and place them in a large bowl. Add the beef, 1 teaspoon salt, and 1/2 teaspoon freshly ground black pepper. Using your hands, gently mix—no overmixing—then divide the mixture into four equal portions. Form patties about 3/4 inch thick. and use your thumb or the back of a spoon to make a shallow indentation in the center of each patty so they don’t form a dome as they cook. Refrigerate the patties while the onions and remaining bacon get ready.
On the stovetop or grill, cook the 6 remaining bacon slices in a skillet over medium heat (or on a preheated griddle on the grill) until crisp, 6 to 8 minutes. Drain on paper towels, let cool enough to handle, then break each slice in half.
Next, pour off all but 1 tablespoon fat from the skillet or griddle. Add the onions—2 large sweet yellow onions, halved and thinly sliced—and season with salt. Cook over medium heat until soft and golden brown, 10 to 12 minutes, stirring occasionally. Transfer the onions to a bowl.
Now the burgers: remove patties from the refrigerator, increase grill heat to medium-high, and grill over direct heat until cooked to your desired doneness—8 to 10 minutes for medium—turning once or twice. When the patties are nearly done, place a cheese slice on each patty to melt.
While the cheese melts, toast the buns cut-side down on the grill grates.
The build is where it gets glorious: spread the bottom half of each bun with the mayo, place a lettuce leaf on the bun, and top with a patty. Layer on the onions, 2 to 3 bacon pieces, and 2 to 3 pickles. Spread the top half of the bun with more mayo, close the sandwich, and serve at once.

This sounds messy af in a good way.
45 minutes?? I don’t believe it lol. Also “spicy mayo” is basically ketchup in my house but okay. If it doesn’t drip like the picture I’m not impressed.
Wait so it’s 80% lean beef and then they add like 2 slices of bacon and a whole cheese slice… that’s not really “healthy” at all. My dad would love it but I’m confused why they keep calling it Father’s Day like it’s a personality test. Also the onions taking until golden like that makes it feel way longer than 45 min.
I skimmed and thought it said “spiked mayo with smoked sweet paprika and chipotle chile powder or cayenne” like that’s normal seasoning but then it also says butter lettuce?? why not just regular lettuce. And 1 3/4 pounds for 4 burgers? that’s like one burger for each kid and then someone’s mad. Sounds delicious though, I can already hear the napkins getting destroyed.
